Snow On The Mountain - Great Crowd pleaser

Here is a great potluck type recipe for family get togethers. I have enjoyed this at several gatherings such as a Bible Study fellowship time, a gals get together and good for a summer pot luck or birthday party.

Snow On The Mountain (from Janice Oliver) Serves 4-6

Rice - 4 cups (cooked or steamed) Chicken - 3 breasts (cooked and shredded) Gravy - 1 can undiluted cream of chicken soup and 1 can of undiluted chicken broth (If you enjoy garlic, you can add 1 minced clove to the broth before you heat it.)

Stuff to top it with:

Mandarin orange slices - 2 small cans
Crunchy Chow Mein noodles (Sun Luck brand is best)
tomatoes - chopped
green onions - chopped
celery - thinly sliced
pineapple chunks or tidbits - large can
grated cheddar cheese - 3 cups
slivered almonds or sunflower seeds
coconut - 2 cups
raisins - 2 cups
water chestnuts - 1 can
sliced mushrooms - 2 cups (optional)
mini-marshmellows - 2 cups

Note: it's the combination of the sweet, sour, salty, crunchy and smooth that makes this recipe a winner. Serve with warm chewy bread or Orowheat Best Winter Wheat Premium Rolls. Great recipe for crowds, Bible Study groups,Bridal or Baby Showers, Mother's Day etc.
